Vanilla Muffins

I truly believe everyone needs two muffin recipes, which are perfect for making cupcakes: a classic vanilla muffin recipe and a chocolate muffin recipe. Just like the chocolate muffin the vanilla muffin checks all the boxes – soft, moist, and with a perfectly flat top, ready for your favourite frosting.

Ingredients:

(muffins)
330gflour, sifted
15gbaking powder
150gsugar
5gfine salt
115gunsalted butter, melted
2large eggs, room temperature
18ghigh-quality vanilla extract
250mlwarm milk
250mlwarm water

Instructions:

  • Step 1Mix all the ingredients together in a large mixing bowl until smooth – for details check the chocolate muffin recipe.
  • Step 2Fill the paper liners until they are just over 3/4 full (the muffins will not rise a lot during the baking process).
  • Step 3Bake in a preheated oven at 150°C (top/bottom heat) for 24 minutes.

Notes & Variations

For an egg-free version just skip the eggs and add 1 tablespoon of vinegar. Easy!
