Coffee Cookies

(Makes approx. 80 cookies)

I’m obsessed with coffee – whether it’s hot, cold, or any form in between. It gets me going in the morning and gives me that much-needed boost in the afternoon. But what about those days when you’re too busy to enjoy a cup? That’s where these cookies come in.

I created them for the days when I just don’t have time to sit and sip my coffee. These little bites are soft, melt-in-your-mouth deliciousness, with a rich coffee aroma that hits the moment you take a bite. Perfect for all my fellow coffee addicts!

Ingredients:

(cookies)
  • 435g spelt flour, sifted
  • 10g baking powder
  • 1 large eggs, room temperature
  • 10g instant coffee
  • 200g soft butter
  • 200g sugar
  • 100ml low warm milk

Instructions:

  • Step 1Preheat your oven to 180°C (fan setting) and line your baking trays with parchment paper.
  • Step 2In a mixing bowl, combine all the ingredients using a flat beater (or if you prefer mix the ingredients with a good old-fashioned spoon!).
  • Step 3Roll the dough into small balls, place them on the baking tray, and gently press down with a fork or your hand to flatten.
  • Step 4Bake for about 12 minutes, or until the edges start to turn golden.
  • Step 5Let them cool completely and enjoy the coffee-infused magic!

Notes & Tips:

  • If you like a little extra sweetness, dust some powdered sugar over the cookies once they’ve cooled.
  • Want a dairy-free option? Swap the milk for lukewarm water or, for an extra coffee kick, use lukewarm coffee instead.
  • If spelt flour isn’t your thing, feel free to use regular white flour – no need to adjust the quantities.
