Coffee Cookies

(Makes approx. 80 cookies)

I’m obsessed with coffee – whether it’s hot, cold, or any form in between. It gets me going in the morning and gives me that much-needed boost in the afternoon. But what about those days when you’re too busy to enjoy a cup? That’s where these cookies come in.

I created them for the days when I just don’t have time to sit and sip my coffee. These little bites are soft, melt-in-your-mouth deliciousness, with a rich coffee aroma that hits the moment you take a bite. Perfect for all my fellow coffee addicts!

Ingredients:

(cookies)

435g spelt flour, sifted
10g baking powder
1 large eggs, room temperature
10g instant coffee
200g soft butter
200g sugar
100ml low warm milk

Instructions:

Step 1Preheat your oven to 180°C (fan setting) and line your baking trays with parchment paper.
Step 2In a mixing bowl, combine all the ingredients using a flat beater (or if you prefer mix the ingredients with a good old-fashioned spoon!).
Step 3Roll the dough into small balls, place them on the baking tray, and gently press down with a fork or your hand to flatten.
Step 4Bake for about 12 minutes, or until the edges start to turn golden.
Step 5Let them cool completely and enjoy the coffee-infused magic!

Notes & Tips:

If you like a little extra sweetness, dust some powdered sugar over the cookies once they’ve cooled.
Want a dairy-free option? Swap the milk for lukewarm water or, for an extra coffee kick, use lukewarm coffee instead.
If spelt flour isn’t your thing, feel free to use regular white flour – no need to adjust the quantities.
