Oatmeal cookies

Everyone loves having cookies at home, whether they are in a hidden box in the cupboard or in a beautiful jar on the counter. The main thing is to have something to dip into your coffee/tea or to snack in between…

These cookies are relatively healthy since they contain a lot of oats, and oats are an excellent source of dietary fibre (which can lower cholesterol, regulate blood sugar and even promote digestion), vitamins and minerals (Vitamin B, iron and zinc). They are also low in fat.

To make a long story short – bake, eat and let me know what you think ☺️

Ingredients:

(cookies)
140gflour (our secret: I prefer spelt flour)
7gground cinnamon
7gbaking soda
2gsalt
90gDemerara brown sugar
150gsoftened butter at room temperature
1egg L
10gvanilla extract
150gcoarse oats
150gdark raisins

Instructions:

  • Step 1Sift the flour into a kitchen bowl, add the cinnamon, baking soda and salt, mix it well and put it aside.
  • Step 2With the flat beater mix butter and sugar until smooth.
  • Step 3Add the egg and vanilla extract and mix until incorporated.
  • Step 4Add the flour mixture and mix only until the flour is absorbed into the dough (if necessary, use a spatula to make sure that all the dough is formed).
  • Step 5Add the oats and mix until combined.
  • Step 6Add the raisins and mix briefly again.
  • Step 7Wrap the bowl in plastic and refrigerate for half an hour.
  • Step 8Preheat the oven to 175°C (top/lower heat).
  • Step 9Using an ice cream scoop (or your clean hands) form balls from the dough and place them at large intervals on a baking sheet lined with parchment paper (the cookies spread out on the sides).
  • Step 10Slightly press the balls flat with your fingers.
  • Step 11Bake for about 12 minutes, until the cookies are golden brown at the base.
  • Step 12Cool completely and store in an airtight box.

Notes, clarifications, pro tips and more:

  • The baking time varies from oven to oven and is also affected by the size of the cookies. The first time you bake them, after 8 minutes keep an eye on the oven and see when the cookies start to get a slightly darker frame. That’s the time to take them out.
  • Those who don’t like raisins can omit them from the recipe.
  • If you like nuts, you can add about 100 g of coarsely ground nuts (every sort you like).
  • If you like chocolate, you can add 70 g of chocolate (I prefer 70% dark chocolate).
